The colour of this honey ranges from light hay to pale green. Sometimes, it can be colorless, and is thus considered the lightest kind of honey.
After crystallizing, the colour changes from white to cream-yellow. It is as sweet as sugar beet syrup. Due to its high fructose content, it stays liquid for a long time and crystallizes slowly.
It is distinguished by its soft and slightly tart taste and known as the sweetest of all types of honey. Its sweet taste makes is especially popular with children. Thanks to its light aroma and consistency, it is a popular sweetener in many foodstuffs and beverages.
It comes from acacia groves in southern Slovakia, mostly around Rimavská Sobota, Veľký Krtíš and Lučenec.
