Prepare the oil in a large, heavy-based pan over medium heat. Introduce 2-3 popcorn kernels and cover with a lid, waiting for them to pop (this may take up to 5 minutes). This step will indicate that the oil has reached the desired temperature.
Remove the pan from heat and uncover. Now, add the remaining corn and cover again, then shake the pan to evenly coat the kernels in the hot oil. Let it sit for 1 minute before returning the pan to heat. Lift the lid a bit to release the steam. This helps keep the popcorn crunchy.
Continue shaking occasionally as the kernels pop . Once the popping slows down, remove from heat. While still warm, toss with any desired seasonings and let cool slightly before serving.
