Due to the dehydration process, the melon’s natural sugars become concentrated, resulting in a flavour similar to fruit leather or candy. If you find it too chewy, cut into smaller pieces and hold in the mouth for a few seconds to soften before chewing. Alternatively, soak in warm water to soften.
