Galangal’s gingery, lemony, mustard flavour is much milder than that of ginger. It is often used as a pepper substitute due to its fine dry spiciness. In Thailand, galangal is used in a wide range of food such as Indonesian satays and in the chicken soup Tom Kha Gai.
